Post-Christmas Clean Eating

Good evening everyone!

There has been a whole lot of nothing going on post-Christmas up until today thanks to the big blizzard that hit the Northeast! A day after Christmas I was snowed into my house with my mom and dad and, having sworn off baking or cookies, I was a little bit bored and the walls began closing in.

After Christmas I made resolution to clean up my diet and end the year on a good note…and keep it going for 2011! My diet has definitely taken a major hit this semester, mostly due to stress, and I really desperately want to get back on track. I don’t eat unhealthy by any means, but I stress snack on crackers, cereal, and other carbs that I just don’t need. I am using a “clean diet” mentality to refocus back on whole foods and unprocessed and healthy fruits and vegetables. I also have overdosed on cookies, specifically doughballs, over the holidays and my insulin needs a break!

So, how have I been doing? Here’s a couple highlights:

Leftover salmon (from Christmas day), steamed kale/brussels/mushrooms, brown rice.

Banana oats with Justin’s Maple Almond Butter

Spiced Pear Salad with Garam Masala Chickpeas. I usually just put cumin on my chickpeas but I thought of the garam masala after using the cinnamon on the pears, great choice, it was really tasty! I had this salad along with a sweet potato.

I do have to admit that I am not doing the greatest on cutting down on crackers, I’ve been feeling kind of sick lately (I think I got a touch of the stomach bug that was circling around) and today I had an upper endoscopy which knocked me off of my normal eating a bit. I am excited about making this transition to more clean eating, though, and am making it my goal to get in the habit of before spring semester begins. I am also trying to do more mindful and enriching things with my time. I started reading again this week, The Girl with the Dragon Tattoo, and plan to finish the series before spring semester. I also am getting back to mindful exercise, like today’s photo walk of the snowy streets:

How cute is this snow family?! I definitely wanted to make one the other day, but after shoveling for an hour, I lost my motivation 🙂

After my short walk I came back home to get back into my book. I am totally hooked on this story and am really glad there’s three of them to get through! I have been reading a lot of blogger New Years resolutions and am excited to plan out mine and share them with all of you.
