Life has been a little busy the past few days with grad classes, substitute teaching, meetings, and parties. Eric and I finally had a fun photo day today so I thought I’d share:
And after all of that photography and adventuring we needed some dinner:
That would be homemade pizza’s on homemade wheat focaccia:
1 cup all-purpose flour
2/3 cup spelt flour
2 tsp baking powder
1/2 tsp salt
1 egg yolk
1/2 tbsp EVOO
3/4 cup water
Directions: Sift together flour, baking powder, and salt in a large bowl. Make and indent and add the egg yolk and EVOO. Use a wooden spoon and big to stir to combine while gradually adding the water. Once comebined, knead on a flour surface for about 1 minute until the dough is elastic and not sticky. Place in a bowl and cover with a dish towel and allow to rise for 30-45 minutes. Split in two and cover with your favorite toppings. Bake at 450 degrees for 15 minutes.
